These Gluten Free Cookies and Cream Cookies are soft and chewy chocolate chip cookies that are loaded with chocolate sandwich cookies! They're also eggless, nut free and can easily be vegan!

In a medium bowl, combine the gluten free flour, baking soda and salt. Whisk to combine.

In a small bowl, using a spoon, mix together the cornstarch and water until thin and watery. It will be thick and tacky at first.

In a large bowl of an electric mixer fitted with the paddle attachment, beat the dark brown sugar and softened butter or vegan baking together until creamy.

With the mixer on low speed, beat in the cornstarch water, the milk of choice, the molasses and the vanilla until fully combined. It will appear chunky. That’s normal.

Beat in the gluten free flour mixture a third at a time until just combined. Use a spatula to scrape down the sides and combine.

Using a spatula, fold in the broken cookies and chocolate chips.

Chill the dough. You must do this with eggless cookies. Bake in the middle rack of the oven until golden brown on the bottoms.
