This Gluten Free Strawberry Cake is a soft, buttery  gluten free vanilla cake with sugar coated strawberries on top of the cake itself. Best part is, it’s also eggless, nut free and easily vegan!

Whisk together gluten free flour, baking powder, baking soda and kosher salt.

Slowly beat the dry ingredients into the creamed sugar and butter/vegan baking stick, homemade buttermilk, cornstarch water mixture and maple syrup.

Scoop the batter into a greased pie dish and smooth the top with a butter knife.

Wash 12 strawberries, cut the tops off, slice them in half and hull them (remove the core).

Arrange the strawberry halves on top of the batter close together but without being on top of one another.

Sprinkle a tablespoon of sugar over the entire top of the cake, covering the strawberries.

Bake the cake in the center rack at 350 degrees fahrenheit for 65-70 minutes until golden and slightly springy when carefully touched.

This cake can easily be vegan by using a non dairy gf flour, vegan baking sticks, non dairy milk and gf/vegan maple syrup.

Store the cake in the pie dish at room temperature and cover the top with aluminum foil.
