These decadent Vegan Cookies & Cream Brownies are loaded with cookies, frosting and ganache! Oh and they're gluten free, nut free and vegan!

Place half the batter in an 8x8 pan. Place your gf/vegan chocolate sandwich cookies on top. Place the rest of the batter on top of the cookies and bake for 26 min at 350 degrees.

After they cool, frost the brownies with the cookies and cream frosting. Pop in fridge till cold. Pour on the ganache.

While the ganache is wet, place more broken gf/vegan chocolate sandwich cookies on top. Pop back in fridge till ganache is hard.

Let thaw for 10 min before slicing. Store in an airtight container at room temp.
