These Soft Chocolate Sugar Cookies are decadent, soft, chewy and loaded with mini chocolate chips! If that wasn't enough, they're gluten free, nut free, eggless and easily vegan!

In a large bowl, whisk together the gluten free flour, cocoa powders, baking powder and salt. Set aside.

In a small bowl, using a spoon, mix together the cornstarch and water until thin and watery. It will be thick and tacky at first. Set aside.

In a large bowl of an electric mixer fitted with the paddle attachment, beat the butter or vegan baking stick and the dark brown sugar until it is soft and creamy.

Slowly beat the cornstarch water mixture, the vanilla and milk into the creamed butter and sugar. It will look chunky.

Beat in the dry ingredients till combined and fold in the chocolate chips with a spatula.

Chill the dough. This is a must  for eggless cookies.

Scoop the dough, press in chocolate chips, roll in granulated sugar and bake for 13 minutes.

Reshape the cookies when they come out of the oven. Let cool for 5 min on the baking sheet before moving to a cooling rack.
