    A Pizza Bianca that’s gluten free, egg free and nut free containing three beautifully melted cheeses infused with garlic is a pizza lover’s dream come true. It’s easy to prepare and perfect for pizza night at your home.

    Reasons to Love this Pizza

    Pizza Bianca is exactly what it means in Italian. White Pizza. It is exacrly that. It is pizza made without any tomato sauce, or any sauce of any kind. Just cheese. 

    Don’t get me wrong. I absolutely adore tomato sauce however, I also love cheese without the sauce. When the sauce isn’t added, you can truly appreciate the flavors of the cheese...and that is exactly how I feel about this white pizza. 

    How to Make Pizza Bianca

    Here are the step by step instructions to make this pizza!

    Step 1: Preheat the Oven

    Preheat your oven to 375 degrees Fahrenheit. 

    Step 2: Spread the Dough

    The bag will tell you how to spread the dough over the pan.

    Step 3: Sprinkle Cheese

    Once your dough is spread over the pizza pan, sprinkle about 2 cups of the shredded mozzarella over the plain dough, leaving the edge of the dough without cheese for the crust. If you like lots of cheese, you can always add more. Set aside. 

    Step 4: Make the Ricotta Garlic

    Put ¾ cup of ricotta into a small bowl and set aside. 

    Dice up the one clove of garlic into tiny little pieces and add to the ricotta cheese. Add some fresh ground pepper and a pinch of kosher salt; mix with a spoon to combine.

    Step 5: Add Ricotta and Romano

    Dollop 6 heaping tablespoons of ricotta mixture all around the pizza, about 5 around and one in the center. If there is any extra just dollop all around. Sprinkle the grated Pecorino Romano over the top of all the other cheese. 

    Step 6: Olive Oil Drizzle

    Drizzle a tablespoon of olive oil in a circular swirl motion over the cheese on the pizza, working from the outside in. Like this:

    Pour a little olive oil into a tiny bowl and using a silicone brush, brush the edge of the crust with the olive oil. If you don’t have a brush, dip a paper towel into the olive oil and gently rub the oil onto the crust.

    Step 7: Bake

    Bake in the oven for about 15 min until the edges of the crust begin to get golden and the cheese is fully melted.  

    And there you have it. Pizza Bianca. It’s gluten free, nut free, egg free and absolutely incredible. Being gluten free doesn’t mean you should miss out on amazing pizzas and this recipe is proof of just that. Enjoy!

    Expert Baking Tips

    What cheeses do we use to make this?

    First we use mozzarella, just like with most pizzas. It’s smooth and mild flavor is the perfect base for the other cheeses. 

    Next we use ricotta. Also mild, but has a slight sweet flavor. I love this recipe because we actually mix the minced garlic into the ricotta so when it melts, the ricotta is infused with this incredible garlic flavor. It’s a dream. 

    The last cheese we will use is one of my all time favorites...pecorino romano. It’s a sharp and salty cheese made from goat’s milk. Yes, you could also use parmigiano reggiano instead but it doesn’t have that same saltiness so the pizza will be slightly less salty. In addition, flavor will be more mild and lack that tang that pecorino romano has.

    Ok. So that’s little bit about the cheeses. Now we need make the dough. 

    But...what gluten free pizza dough to use?

    For this recipe (this isn’t a sponsored post) I love to use Cup4Cup’s Pizza Dough. Yeast and gluten free flour is a tricky tricky beast and this bag makes it so so simple. 

    You simply follow the instructions on the bag and you’ll end up with enough dough for two 13 inch pies. 

    How do we make the dough?

    Make the dough according to the instructions on the bag. Use the cornstarch water mixture instead of an egg for egg free. If you don’t have an egg allergies, you can just follow the bag instructions. 

    For egg free: Mix the cornstarch and water in a small bowl until thin and watery, it will be thick and tacky at first. 

    Follow instructions on the bag. The dough will need to be refrigerated for one hour before using. It’s so simple!

    If you don’t want to mix it yourself, you can also use a pre made gluten free dough, if you prefer.

    Ingredients
     
     

    For the dough:

    • 1 bag cup4cup gluten free pizza dough flour it comes with yeast
    • 1 cup water warmed for about 30 seconds in the microwave
    • 2 heaping tablespoons of cornstarch mixed with 3 tablespoons of water this is the egg replacer

    For the pizza:

    • 2 cups shredded mozzarella cheese
    • ¾ cup ricotta cheese
    • 1 tablespoon grated Pecorino Romano cheese just enough to sprinkle all over
    • 1 tablespoon olive oil and more for the crust
    • 1 clove of garlic
    • Fresh ground pepper
    • Pinch of kosher salt
