    Gluten Free No Bake Cookies

    These Gluten Free No Bake Cookies have no oats at all! They're made with wow butter (creamy peanut butter can be substituted if there are no nut allergies), and gluten free graham crackers! Dipped in melted chocolate chips, these no bake cookies taste like mini peanut butter cups yet they contain no nuts at all! If being gluten free wasn't enough, they're nut free, eggless and can easily be vegan!

    These Gluten Free No Bake Cookies are the easiest treat to make when you don't feel like turning on the oven! Best yet, they contain zero oats! Although certified gluten free oats may not have the risk of cross contamination, some celiacs cannot process oats at all. The protein in oats, avenin, can sometimes trigger a similar response to gluten. So these no bake cookies are safe for everyone with celiac disease!

    Reasons to Love these No Bake Cookies

    • Allergy Friendly- These cookies are gluten free, nut free, egg free, oat free and can easily be dairy free (vegan)!
    • Peanut Butter Flavor- These cookies have that classic peanut butter flavor without any nuts at all just like in my Peanut Free "Peanut Butter" Ice Cream!
    • Easy to Make- These cookies only contain a few ingredients and take don't require any oven time like my Easy Chocolate Mousse!

    Ingredient Notes

    Bowls of Wow Butter, butter, gluten free graham crackers, confectioners' sugar, vanilla, chocolate chips and kosher salt.
    • Wow Butter- For those of you that don’t know, Wow Butter is a nut free butter spread that is made in a gluten free, tree nut free, peanut free, egg free and dairy free facility.  It also contains no seeds and is made of soy. It is perfect for my household since my kids have issues with all those items aside from dairy (finally) and soy. I am lucky enough to have this product in my local grocery store, but you can also buy it Wow Butter on amazon.
    • Butter/ Vegan Baking Stick- Only use room temperature. If you use melted, the cookies will be wet too wet and not stay together.
    • Confectioners' Sugar- We use this type of sugar to keep the cookies smooth since they're not being baked.
    • Gluten Free Graham Crackers- The combo of these with the wow butter and chocolate is utter perfection and gives the cookies a nice mild crunch. I use gf/vegan graham crackers.
    • Chocolate Chips- To keep vegan, make sure to use gluten free/vegan chocolate chips. I love these allergy friendly chocolate chips.

    Substitutions and Variations

    How to Make these into Vegan No Bake Cookies

    • Make sure the brand of sugar you use is vegan. 
    • Use vegan baking sticks instead of butter.
    • Only use gluten free Graham Crackers that are also vegan. 
    • Make sure the chocolate chips you use are vegan.
    • Only use gluten free/vegan nut free butter spreads, like wow butter.

    For Regular Peanut Butter

    • Simply replace the wow butter in the recipe for equal amounts of creamy peanut butter.
    • You can also use any creamy nut or seed butter of choice.

    This recipe has not been tested with some of these substitutions and/or variations due to celiac disease and food allergies. If you change any of the ingredients, please let us know how the recipe turned out in the comments below!

    How to Make No Bake Cookies

    Here are the step by step instructions to make this no bake cookie recipe!

    Step 1: Crush the Graham Crackers

    Put all of the graham crackers in a zip top bag and use a rolling pin to break them into a sand-like consistency. Set aside.

    Crushed graham crackers, butter, wow butter, vanilla and salt mixed into a no bake base.

    Step 2: Mix the Ingredients

    In a large bowl of an electric mixer fitted with the paddle attachment, beat the butter and wow butter and until soft and combined.

    Mix in the confectioners' sugar, graham crumbs, vanilla and salt. The mixture will be crumbly.

    Be careful not to over mix the wow butter; it can seize up.

    Step 3: Form the Dough Into Balls and Flatten

    Break off a 2 inch piece of dough. Work it back and forth in your hands until smooth. and roll into a 2 inch ball.

    With the back of a fork, press the cookies gently down and then again in the opposite direction to form a criss cross pattern.

    Pressed fork lines create a crosshatch on the cookie top.

    Step 4: Freeze for 15 Minutes

    Freeze for at least 15 min on a parchment lined baking sheet.

    Step 5: Melt the Chocolate and Wow Butter

    While the cookies are freezing, place the extra wow butter and chocolate chips in a microwave safe bowl. 

    Heat in 15 second increments, stirring after each time until completely melted.

    Step 6: Dip the Cookies and Chill

    Dip half of each cookie into the melted chocolate with wow butter. Scrape off the bottom of the cookie on the side of the bowl if need be and then place the cookies onto the baking sheet lined with wax paper and refrigerate until the chocolate is hard.

    Expert Tips

    • Use Wax Paper- Place your cookies down on parchment paper or wax paper when freezing and after submerging them in melted chocolate. Make sure to use something otherwise they will stick to your baking sheet when chilling. 
    • Work the Dough with Your Hands- After the dough is all mixed together it will be crumbly. Use your hands to work it together to make it smooth.
    • Melt the Chocolate Slowly- Make sure to melt the chocolate chips in a heat safe bowl in the microwave in 15 second increments, stirring after each time. I know it takes way longer this way but if you put the chips in for 30 seconds, the chocolate will seize up and not be a liquid.
    • Cookies Must Be in the Fridge- If you do not store these cookies in the fridge, they will be a liquidy mess.

    What is Wow Butter?


    Wow Butter is a nut free butter spread that is made in a gluten free, tree nut free, peanut free, egg free and dairy free facility.

    In addition, it also contains no seeds and is made of soy. The flavor truly reminds me of peanut butter!

    Wow Butter is perfect for my household since my kids have issues with all those items aside from dairy (finally) and soy.

    Can I use any type of chocolate?


    Yes! You can use semi-sweet, dark, milk, etc.

    What if I don't have nut allergies? Can I use peanut butter?


    Yes! If you don’t have any nut allergies, you can use creamy peanut butter in place of the wow butter.

    Simply replace the wow butter in the recipe for equal amounts of creamy peanut butter!

    Or you can use any creamy nut or seed butter of your liking.

    How do I store these No Bake Cookies?


    Once the chocolate hardens, keep the cookies in an airtight container in the fridge for up to 3 days in a single layer. Do not stack.

    Do not store at room temperature or they will be melty.

    Ingredients
     
     

    For the Cookies

    • 4 tablespoons unsalted butter , or vegan baking stick, room temperature
    • 1 cup wow butter
    • 1.5 cups confectioners' sugar
    • 1 cup gluten free graham cracker crumbs (about 8 graham cracker sheets)
    • ¼ teaspoon pure vanilla extract
    • pinch kosher salt

    For the Chocolate

    • 1 cup chocolate chips
    • 2 tablespoons wow butter

    Instructions
     

    • Put the 8 sheets of graham crackers in a zip top bag and use the flat side of a meat mallet or a rolling pin to break them into teeny tiny crumbs. You want a sand-like consistency. Set aside.
    • In a large bowl of an electric mixer fitted with the paddle attachment, beat the 4 tablespoons of butter or vegan baking stick and the 1 cup of room temperature wow butter and until it is soft and combined. Be careful not to over mix or the wow butter; it can seize up.
      Mix in the 1.5 cups of confectioners' sugar, the 1 cup of gluten free graham crumbs, ¼ teaspoon vanilla and salt. The mixture will be crumbly.
    • Since the dough is crumbly, break off a 2 inch piece. Work it back and forth in your hands until smooth. Then roll into a 2 inch ball. 
    • Once in a smooth ball, using a long pronged fork, press the cookies gently down with the back of a fork, and then again in the opposite direction to form a criss cross pattern.
      Repeat with all the dough.
    • After shaping the cookies, freeze for at least 15 min on a parchment lined baking sheet.
    • While the cookies are freezing, place the 2 tablespoons of wow butter and 1 cup of chocolate chips in the same small microwave safe bowl. 
      Heat in 15 second increments, stirring after each time until completely melted.
    • Dip half of each cookie into the melted chocolate with wow butter. Scrape off the bottom of the cookie on the side of the bowl if need be and then place the cookies onto the baking sheet lined with wax paper and refrigerate until the chocolate is hard.

      You should mention that Wow butter is not soy-free for those of us out there that are allergic to soy.

      I made these today with Skippy Natural Creamy Peanut Butter (using the same amounts called for Wow Butter) and Pamela’s GF Graham Crackers and OMG soooooo good! Better than Reese’s PB Cups.
