I absolutely adore Graham Cracker Crumble! It's so delicious and crunchy! I'm always looking for toppings for ice cream and these crumbled graham crackers are the perfect ice cream topping and frozen yogurt topping! They go perfectly with my homemade Apple Pie Ice Cream and my Pumpkin Spice Ice Cream! But something about Chocolate Pudding and crushed graham crackers go together so beautifully as well! With only 5 minutes of actual baking time, these gluten free graham cracker crumbs are easy to make and a wonderful addition to even my Chocolate Pudding Pie and my Apple Pie Cookies!

Ingredient Notes

- Gluten Free Graham Crackers- I love to use pre-made gluten free grahams to save time when making the crumble topping. I use these gf/vegan graham crackers.
- Confectioners' Sugar- We use this instead of granulated sugar because it's nice and light and melts very easily once it's mixed with the melted butter.
- Light Brown Sugar- I like to use this with the confectioners' sugar to add a little of that molasses flavor.
- Cinnamon- Adds that cozy woodsy flavor that reminds us of fall baking!
- Kosher Salt- I love using kosher salt in all my recipes because you can really taste it in every bite and it helps to draw out all the flavors!
- Butter/ Vegan Baking Stick- We need to use melted. If using vegan butter, make sure to watch the crumble the entire time it's baking because it tends to burn easier.
- Pure Vanilla Extract- Make sure the vanilla you use is pure and gluten free. Using a vanilla that isn't pure will give the crumble a chemical-like flavor.

How to Make this into Vegan Graham Cracker Crumbs
- Buy vegan graham crackers that are also gluten free and allergy friendly.
- Make sure the brands of sugar you use are vegan.
- Use vegan baking sticks instead of butter.

How to Make Graham Cracker Crumble
Here are the step by step instructions to make this gluten free graham cracker crumb recipe!

Step 1: Crush the Graham Crackers
Put the graham crackers in a zip top bag and use the flat side of a meat mallet or a rolling pin to break them into teeny tiny crumbs. Set aside.

Step 2: Mix the Dry Ingredients
Pour the graham cracker crumbs, sugars, cinnamon and kosher salt into a bowl and whisk to combine.

Step 3: Add Melted Butter and Vanilla
Melt the butter and using a small spatula add it with the vanilla into the crumb mixture. Mix until completely combined.

Step 4: Bake and Cool
Pour the crumbs on an ungreased parchment lined baking sheet and bake for 5 minutes at 325 degrees Fahrenheit. Once done, set aside to cool.
The crumble will be very soft right out of the oven. It will crisp up as it cools.

Step 5: Transfer to Paper Towel
After a few minutes, transfer the crumble to a paper towel and let sit for a few minutes to absorb some extra moisture.

Step 6: Break into Small Pieces
Once the crumble has hardened, using clean hands, break any large clumps apart into small crumbles and enjoy!
Expert Baking Tips
- Read the Gram Amount- Gluten Free Graham Cracker sheets tend to be smaller than graham crackers made with AP flour. You need to use enough graham crackers to create about ½ cup of crushed graham cracker crumbs. About 65 grams of graham crackers.
- Microwave the Butter a Few Seconds at a Time- This might take longer but if you microwave the butter for more than a few seconds at a time, it might explode all over your microwave into a giant mess. I like to place a paper towel over the top of the bowl so if it does explode, the mess is avoided. You can always melt the butter carefully on the stove top as well.
- Let it Cool- Right out of the oven the crumble will be super soft and may have spread out a bit. Use a spoon to push it back together and let it cool. It will become crispy once cool.

Yes! Once cooled and crunchy, store the crumble in the fridge in a bowl covered with plastic wrap or in an airtight container for up to 3 days.
Bring to room temperature prior to using.
You can but I like crushing them by hand. That prevents them from becoming too sandy. If you use pre-crushed, keep in mind the crumble will not have some nice chunks like if you crush by hand.
Once the crumble is cool and crispy, place in a bowl, cover with plastic wrap and store in the fridge for up to 3 days. Or store in an airtight container.

Graham Cracker Crumble
Ingredients
- ½ cup gluten free graham crackers crumbs (about 65g or 4 sheets smashed)
- ½ tablespoon confectioners' sugar
- ½ tablespoon light brown sugar , packed
- ⅛ teaspoon ground cinnamon
- 1 pinch kosher salt
- 2 tablespoons butter or vegan baking stick, melted
- ½ teaspoon pure vanilla extract
Instructions
- Preheat your oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper. Do not grease. Set aside.
- Put the 4 sheets of gluten free graham crackers (65 grams) in a zip top bag and use the flat side of a meat mallet or a rolling pin to break them into teeny tiny crumbs. Set aside.Please note that gluten free graham cracker sheets tend to be much smaller than other graham cracker sheets. Please read the gram amount or use enough grahams to get ½ cup crumbs.
- Pour the graham cracker crumbs into a small bowl. Add in the ½ tablespoon confectioners' sugar, the ½ tablespoon light brown sugar, the ⅛ teaspoon ground cinnamon and the 1 pinch of kosher salt.Whisk to combine and set aside.
- In a microwave safe medium bowl, melt the 2 tablespoons of butter or vegan baking stick in 20 seconds increments until completely melted.
- Pour the melted butter into the graham cracker crumb mixture. Add in the ½ teaspoon pure vanilla extract and use a small spatula to form the mixture into crumbs.
- Spread the graham cracker crumbs in an even layer onto the ungreased parchment lined baking sheet and bake for 5 minutes.After 5 minutes, remove from the oven and use a small spatula or a spoon to mix the crumbs. They may have spread out a little because of the butter. Let cool a few minutes.The mixture will be very soft right out of the oven but it becomes crispy once it cools.
- Transfer the crumbs to a plate lined with a paper towel to absorb some of the extra liquid from the butter. Let cool for 10 minutes until the crumbs are crunchy.
